1 ripe avocado
¼ c fresh cilantro
2 T lime juice
2 cans of organic black beans
4 c. shredded romaine lettuce
1 c grape tomatoes
1 c organic corn kernel – thawed if frozen
1 small red bell pepper
½ c toasted pumpkin seeds
In a large bowl, whisk together avocado, cilantro & lime juice until blended. Add remaining ingredients and toss until evenly coated.
