HEALTHY MIND:
I believe that we go through life challenges to build us stronger and to equip us for something greater. However, it is often difficult to stay positive during the trials of life. But if we stop for just a moment and reflect on our lives, we realize there have been many dark moments. And when we realize that we also realize there have been many light moments.
No matter what you are going through today, remember the sun will shine again. Whether you are suffering from grief, depression, or some other disappointment, He has a way of turning it around for you.
"And we know that all things work together for good to them that love God, to them who are the called according to his purpose." Romans 8:28
I have learned to focus on the things that are a blessing in my life, and give less attention to the negative. When I change my perspective to focus on the positive, it diminishes the power of the negative.
HEALTHY BODY:
Pan-Roasted Chicken Cutlets with Maple-Mustard Dill Sauce
Ingredients 4 (6-ounce) skinless, boneless chicken breast halves1/4 teaspoon salt 1/4 teaspoon black pepper Cooking spray 2 tablespoons chopped red onion 6 tablespoons maple syrup 1/4 cup Dijon mustard 1 tablespoon water 1 teaspoon chopped fresh dill 1 teaspoon grated orange rind PreparationPlace each chicken breast half between 2 sheets of heavy-duty plastic wrap; pound each to 1/4-inch thickness using a meat mallet or small heavy skillet. Sprinkle chicken evenly with salt and pepper. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add chicken to pan; cook 4 minutes on each side or until done. Remove chicken from pan.Reduce heat to medium. Add onion to pan; cook 1 minute. Add syrup and remaining ingredients; cook 1 minute or until thoroughly heated, stirring frequently. Serve sauce with chicken.
