Pasta with Pancetta and Leeks

TPW_8050This meal took about fifteen minutes to make. It was so easy.

But more than that, it was absolutely delicious.

And now for the truth: I am a leek…freak. I absolutely love the things. I have my most favorite pizza recipe in the world in my cookbook—it's topped with leeks, bacon, thinly sliced potatoes, and goat cheese. It's all I want in life, other than tan skin and world peace. I made the pizza (for myself, of course, since my family thinks goat cheese will kill them) a couple of weeks ago...
