With the weather below freezing in some parts of the U.S. and budgets stretched to the limit from end of the year celebrations we want to share some tips that can help you prepare a hearty meal without extra trips to the bank and grocery store.
1. Shop in your pantry. If you keep your pantry well stocked with canned vegetables, beans, whole wheat and/or gluten free pasta, vegetable stock, grains and boxed tomato puree you have a nutritious, inexpensive meal at your fingertips.
2. Cook once eat twice. (Or three or four times) If you’re cooking up a soup or stew a few extra minutes of chopping will allow you to double your recipe and have a reserve meal in the freezer for a busy night and keep you out of the stores when the rest of the world is stocking up in advance of bad weather.
3. Cook up anything that’s starting to look “tired”. If something is beginning to wilt but you don’t have a plan to use it in a meal this week steam or saute it now and freeze it for later. It will take just a few minutes and it allows you to keep it “in reserve” instead of wasting it.
