Peersin a confyt
This is more of a fall dish but it shows how some dishes have lasted through the centuries. It's a pear confit or basically pears stewed in wine. I understand most of the recipe but some words escape me. It's fun to read these old manuscripts and try to guess at the words. Anyway, this looks like a nice dessert to serve with a dollop of whipped cream!
Takepeers and pare them clene, take gode rede wyne , mulberes and seeth the peerthin and whan thei buth yfode, take them up and make a syrup of wyne greke. Addblanch pwer, white sugar and gower gyng and do the peers in, seeth it a lytleand messe it forth.
