Saturday Seven, 11.
I took a little hiatus from my beloved Saturday series. Let’s see… the holidays, mind-clearing weekend vacations, cookbook, cookbook, and more cookbook have all gotten in the way. I don’t know if I’ve ever told you this, but writing a cookbook is exactly like having a second blog. A monster size blog that requires more than 24 hour days, seven days a week. Writing this cookbook is 1,000,000x harder than the first. I thought it would be easier since I’m familiar with the process! No, no. Not at all.
But hey. There is a silver chocolate lining. Taste testing has been fun. It’s helping me get the most out of my gym membership. Chocolate, anyone?

Baked Pecan Crusted Chicken Fingers.
Tender, juicy chicken fingers coated in crunchy toasted pecans. The flavor is amazing and they are faux-fried in the oven!
Chicken fingers, chicken tenders, chicken strips, whatever you call them is fine by me as long as you at least ONCE try them coated in crushed pecans.
Since the day I shot these photos two weeks ago, I’ve made pecan crusted chicken fingers for dinner 3 times. Part of it is me being lazy since they’re so simple and an even bigger part of it is because they are so damn good! Served with a little honey mustard, this dish is by far our favorite way to enjoy chicken finger tender strips.
Bonus: they’re baked, not fried. Yay.

Whole Wheat Banana Bread.
No butter, no oil, 100% whole wheat, 100% actually tasting good.
I know I say I’m obsessed with a lot of recipes which may be convincing you that I’m either (1) out of my mind or (2) just really in love with a lot of food. Or both? Definitely both.
This whole wheat banana bread is absolutely no exception. It blew my mind. To be honest, I didn’t have high expectations. It was merely a way to get rid of 3 overly ripe bananas and a random jar of applesauce. I usually make banana bread with butter and/or oil because hello! That’s where all the goodness hides. Well well well. After 1 bite of this “whatever, it won’t be good” banana bread, I was left proven completely wrong.
Healthy ingredients CAN make incredible things.
Take that, full fat white flour banana bread.
Before we get into some details on the ingredients, let me tell you exactly how this deeply satisfying, yet lightened-up banana bread tastes. It’s hearty and thick. Pairs wonderfully with a cup of coffee in the morning. Dense and tight-crumbed like regular banana bread, but definitely not as sweet. The bread is slightly nutty from the whole wheat flour (and, uh, the walnuts) and tastes incredibly tender thanks to the bananas, applesauce, and eggs. You’ll taste a lot of pure banana flavor. Complimenting the banana’s flavor are vanilla, cinnamon, brown sugar, and honey. I am very light handed with those last two ingredients as I don’t want sugar to overpower the banana’s flavor.

Whole Wheat Blueberry Pancakes.
Fluffy ‘n light blueberry pancakes with nutty, whole wheat goodness. Positively packed with blueberries, a huge stack of these is another reason I love pancakes.
Have I told you before about my love for pancakes?
Yes.
I love them. And these whole wheat blueberry beauties are no exception. They’re fluffy and light and filling and pretty and oh-so-full of juicy blueberries. 45 Calorie Mini Chocolate Chip Muffins.
These 45 calorie mini chocolate chip muffins left me incredibly surprised. A low calorie mini muffin that is also tender, soft, and full of flavor. Plus… lots of chocolate.
Confession. I made these mini chocolate chip muffins back in December without the intention of posting them on my blog. I made them to bring to my friend I was visiting one afternoon (that’s not weird, right?). She didn’t get the chance to taste them until after I left. Once I got home, I received a text RAVING about how good they were.
The kicker? She had no idea they were lightened-up as she praised their tender texture and addictive taste. That’s when you know a lower calorie food is a success.
Another healthy muffin for the win!

Hit The Trail Granola.
Sweet, simple, healthy, wholesome, feel-good “hit the trail” granola. This crunchy trail mix granola is simple to make and has so much flavor and texture!
Another January week, another healthy-ish recipe. It’s been far too long since I’ve made granola and I put an end to that this past Friday. Three new granola recipes are coming to you over the next few weeks and I’m sharing my most munchable flavor today.
Three loves of mine: fluffy blankets, granola, and trail mix. Let’s combine two out of three… actually, if I count all the trail mix granola crumbs spilled on my fluffy blanket while watching TV/munching then we have a tasty (and messy) triple threat.

Lightened-Up Creamy Chicken Noodle Soup.
Enjoy creamy, comforting soup without the guilt. This lightened-up creamy chicken noodle soup has only 200 calories per serving!
I haven’t been able to get creamy chicken noodle soup out of my mind for weeks. I went out to lunch last month and had the most comforting, hearty, soul-warming bowl of it. Along with a light kale salad adorned with pecans and dried cranberries, it was the perfect lunch. And I’ve been craving it ever since.
As the snow quietly fell yesterday morning, I whipped up a big pot of creamy dreamy homemade chicken noodle soup. Rather than relying on anything heavy to give the soup some body, I opted for a little fat free half and half. It did the trick. This is, by far, the best soup I’ve ever made. I may never leave the house for lunch again.
Especially when my lunch date is this little snow bunny.

The start of a new year. New beginnings, clean slate, fresh starts. Let’s kick it up a notch and energize ourselves with a gorgeous, totally energizing, and actually-tastes-good green smoothie.
There is nothing fancy about this smoothie. No strange ingredients you can’t pronounce. No chalky protein powders, no added sweeteners, no nut butters, no dairy. Just produce you know, love, and is readily available to you. Eating (and drinking!) healthy doesn’t have to be a chore.
