Hi! Popping in on a Saturday to show you exactly how I make crepes. Also, happy valentine’s day. Or if you’re against Valentine’s Day, happy Saturday morning.
Whether you’re spending today with a husband, boyfriend, fiancé, bestie, dog (hey, I’m not judgin’)… we all have a Valentine. It’s called chocolate and it never lets us down. Another love? Crepes. Crepes, in their slim and elegant beauty, have a unique buttery lightness. Silky smooth with thin-as-lace, lightly crisped edges. These French style pancakes are the perfect “fancy without actually being fancy” weekend breakfast.
What I mean is, crepes are laughably easy to make. And I’m not only going to TELL you how I make them. I’m gonna freakin’ show ya.

These homemade chocolate cupcakes with creamy raspberry frosting taste like an indulgent, perfect little raspberry truffle.
Hi! Are you sick of the color pink yet? I hope not. Look around, clearly I never tire of the girliest color in the world. Speaking of pink, did you see this read about a guy trying to guess the names of nail polish? My friend sent it to me and I can’t stop laughing. Nail polishes ARE oddly named. I’m currently wearing Essie “jump in my jumpsuit.”

My favorite f-a-v-o-r-i-t-e-s-t chocolate cupcakes on the planet. They’re moist, super soft, fluffy, and fudgy at the same time. Think of a really, really fudgy brownie. Mix that with how rich these chocolate cakes are and you’ve got my recipe for chocolate cupcakes. I usually make them with simple vanilla frosting but in light of Valentine’s Day/my excuse to “pink” everything, I opted for a raspberry frosting.

This is the holy grail of layer cakes. The most romantic, gorgeous, vibrant cake of all time. The “I can’t quite put my finger on the flavor” cake. Dense, yet soft ‘n light. The sweet marriage of buttermilk and vanilla with a little cocoa on the side. Tall, dramatic, and completely covered in tangy cream cheese frosting.
This, everyone, is one and only red velvet.
As I’ve told you many, many times before, I’ve always been unsure about red velvet. Quite honestly, I don’t really trust a cake that has a mystery flavor. Is it vanilla? Is it chocolate? Is it just a butter cake colored red? Why is dessert so confusing! Whatever, I’m ordering cheese fries.

Saturday Seven, 12: Valentine’s Day Edition.
Another Saturday, another reason to share favorite festive recipes with you. We’re one week out from the pinkest holiday of the year. Though Halloween is my favorite holiday, Valentine’s Day is up there as well. I really just like writing sappy cards and reading the odd sayings (“fax me” ???) on candy hearts.
We’ve never really done anything huge on Valentine’s Day– in fact, last year we were snowed in and used that night to book our honeymoon. The year before we went out for Mexican food and the year before? Also Mexican food. And one of our first dates was, you guessed it, Mexican food. But for our first Valentine’s Day as hubs/wife, the plan is for fancy Mexican food. Stepping it up in 2015.

Chocolate Cherry Blossom Cookies.
Cherry almond shortbread cookies topped with a Hershey’s Kiss. These buttery shortbread cookies have so much flavor and taste remarkable with an extra drizzle of semi-sweet chocolate.
One of the most underrated ingredients in the baking world is almond extract. It has a sweet, aromatic flavor reminiscent of amaretto (yum) and pairs well with apricots, peaches, and vanilla. A touch of almond extract can turn a regular cherry pie into an unforgettable dessert and a shortbread cookie into an “omg I need this recipe” …recipe.
That being said, this magical little extract is incredibly potent. Though it can do wonders to a bowl of sprinkle laden puppy chow, almond extract can most definitely be overused. The beauty is in the balance. Finding just the right amount to transform your cookies from good to great. And it’s exactly what makes today’s positively pink recipe outstanding. The subtle kiss of almond extract. The chocolate drizzle helps too.
Don’t they just scream Valentine’s Day? Valentine’s Day!
You may recognize these cookies– they’re the same cookie base recipe as my recent cherry almond shortbread cookies–> I made those 3-4 times over the holidays because the only thing better than their taste is their color. There’s just something about pink cookies. So, I made them again adding a Valentine’s Day twist. A chocolate kiss. ♥ Muah.

Another year of photos coming to you in 2015!
Rather than a photo for every single day, I’ll share a few favorites that I’ve taken each month. I can only share so much of my real life because (1) it’s probably boring and (2) it’s really just writing my cookbook and washing dishes at this point. I was so immersed in writing the other day that it took me until 5pm to realize the shirt I put on at 7am had been backwards. All day long. My backwards shirt.
But hey! At least there was pretty snow outside.

Berry Purple Power Smoothie.
This Berry Purple Power Smoothie is pure berry goodness. With a little yogurt and tons of juicy berries, you’ll instantly feel energized. Plus, it’s pretty.
How ya doin’ today? A little to much snacking and pizza dip and snacking and beer? That would be a big fat Y-E-S for me, as well as one too many pieces of fudge. I made over 11 cookbook test recipes over the weekend and spent time with family and friends taste testing it all. Talk about a chocolate (and pizza dip) hangover.
So this morning, I’m drinking a tall purple pinkish “let’s erase all the unhealthy” smoothie. This smoothie is phenomenal– I made it last week and loved it so much that I whipped it up 3 more times in 4 days. When I like something, I LOVE something.
Like, cheesecake. And salted caramel.
Nothing brilliant or fancy here, just 6 easy ingredients. In terms of taste, berries are bold and center. Strawberries, blueberries, and raspberries. I use all frozen berries except for the strawberries– those are fresh. Use all fresh or all frozen or some fresh/some frozen. Really, whatever is most convenient for you. I will suggest, though, if you use all fresh berries– you’ll need to add a little ice to thicken the smoothie up. I’ll include this in the recipe notes.

Strawberry Cheesecake Muffins.
Soft strawberry studded muffins layered with a light cheesecake filling and topped with brown sugar streusel. A necessary indulgence any morning of the week.
I’ve been craving strawberries like nobody’s business lately. I’m probably just craving fresh fruit in general since I’m constantly surrounded by this. Not that I’m complaining. I made a strawberry smoothie 3 days in a row and when Sunday morning rolled around, these strawberry cheesecake muffins came to life.
They’re bright and cheery, packed with berries, help beat the winter blues, and the best part? There’s a cheesecake surprise inside.
I firmly believe there should be a cheesecake surprise inside all muffins.

My Favorite Pepperoni Pizza Dip.
My very favorite recipe for pizza dip. Loaded with your favorite pizza toppings, this lightened-up pizza dip comes together in a snap. (And is eaten even quicker…)
Here’s my absolute favorite pizza dip recipe. It might not be as glamorous as chocolate fudge cake or photogenic as, say, a sprinkle loaded cookie but this here pizza dip… oh man. It’s one of my favorite recipes on the planet. At least the mini pepperonis make it look cute, right?
The best part about this pizza dip is that it’s lightened up from the full fat version you know and love. Sacrificing none of the outstanding pizza flavor, of course.
(I know what you’re thinking already. Ew! Olives! The olives are optional. I love olives as much as I love walnuts in my brownies and dare I say it? Raisins in my cookies.)
I’ve been making this dip for years and with Super Bowl Sunday right around the corner, I’m so excited to finally share the recipe with you. Who are you rooting for this year? Actually, I don’t want to cause any fights in the comments section.

Chocolate Fudge Cakes for 2.
A chocolate fudge cake so rich, it puts all other chocolate desserts to shame. This small batch recipe makes only 2 and is perfect when you don’t need to feed a crowd.
Let me begin with: this is a recipe where diets do not belong.
I was going to wait until closer to Valentine’s Day to post this fabulously indulgent recipe, but I’m the queen of impatience. For me, “allow the cupcakes to cool completely before frosting” means putting them in the refrigerator to speed up the process. I also begin wearing flip flops in April and break out my scarves in August.
Speaking of impatience, I made a chocolate cake recipe that doesn’t require cooling before digging in. Hallelujah. And what’s more? These chocolate fudge cakes are ready in a flash.
This recipe reminds me of a chocolate molten cake. Hey, did you know that I use to waitress at Chili’s restaurant in college? Fajita rita Mondays, anyone? Chili’s dessert recipe, the molten lava cake, is one of their most popular desserts and it’s clear why. Rich, chocolate cake oozing with chocolate inside. My homemade version doesn’t really resemble a soufflé like most molten cakes; it’s more of a tiny chocolate brownie cake.
