What did you do? Did you make any of my recipes? Fire up the grill? Watch fireworks and catch some rays? The weather was miserable, humid, and rainy on Saturday here in Philly so a lot of my celebrating was indoors. Which didn’t stop us from the best party of all time.
Seeing how many of you love my recent Asian-inspired salmon recipe inspires me to share more of my dinner favorites. While I enjoy baking desserts the most (cookies > dinner), dinner is an everyday adventure. And if you’re like me, you’re constantly searching for quick ‘n easy meals. Sweet Cherry Pie with Toasted Almonds.

Happy almost 4th of July!! I’m taking this seriously patriotic time of year as an excuse to get down to business in the kitchen and bake up some all American classics.
When summer hits, I rush to my rolling pin in delight. “It’s time for fruit pie! It’s time for fruit pie!” I don’t say to myself. But you know. I’m really excited. One of the first pies I make of the season is apple pie. This you already know. Runner up is cherry. Cherry pie always makes an appearance on my table in July. There’s no denying the indulgence of this brightly-hued delicacy. In fact, it’s one of summer’s finest rewards.
Cherries are in their peak season right now and rather than eating them by the fistful as per the usual, try today’s recipe.
Now that you know everything about making homemade buttery flaky pie crust, let me teach you how to make a sweet cherry filling that trumps canned cherry pie filling goop.

Bakers! Welcome back to my Baking Basics series.
This is a very long post. Pie crust makes me chatty.
It’s summer. The days are longer and a bounty of fruit is at our fingertips. And this means you have time to finally nail homemade pies. Today I’m going to teach you everything you need to know about making the perfect buttery flaky pie crust. This is the one and only pie crust recipe I use. It’s been passed down through generations. Stands the test of time. Old-fashioned, yet never out of style. Wins my heart every single time.
There is nothing more satisfying than making a pie completely from scratch. From the golden crust to the juicy filling and everything in between. Pies are so damn tasty for one reason: they’re time consuming. This shouldn’t scare you! It should intrigue you. Because if you can bake an exceptional homemade pie, congratulations. You’re a talented baker.

3 Ingredient Blueberry Yogurt Swirl Popsicles.
Definitely your new favorite summer treat.
It’s the return of 3 ingredient popsicles!!
Ladies and gents, it’s been a year since I posted my beloved 3 ingredient strawberry banana popsicles. Since then, I’ve made them about 84,752 times. I know what you’re thinking: you’re exaggerating! that’s a lot of bananas!
And it’s taken me this long to conjure up yet another simple and completely healthy popsicle that is made with little ingredients and flaunts the same highly addictive appeal. May I present you with my swirly blueberry yogurt popsicles!
This recipe came to me one morning as I was eating my snooze-worthy weekday breakfast of Greek yogurt, fruit, granola, and a bucket of coffee. I have the same breakfast nearly everyday during the week because I’m the definition of routine. Are you like that too?!

Key Lime Pies.
What’s better than key lime pie? LITTLE BABY key lime pies!
Is it just me or do teeny tiny versions of food taste better?
Like muffins, apple pie, french toast, brownies, CHOCOLATE CAKE.
Individual key lime pies > actual key lime pie.
I made this recipe last week to share on Delish.com. Have you heard? I’m joining the ranks as their newest contributor! I share a new recipe every other week on Delish.com. Speaking of mini food… margarita slushy shots. Enough said typed.
Summer and key lime pie go together like ben and jerry, mac and cheese, vacation and margaritas. Key lime pie is the type of dessert that takes barely any effort– which makes it perfect when the days are long and the weather’s warm. Aka when there’s a million other things you’d rather be doing than slaving away in a hot kitchen.

Saturday Seven, 20: EASY Fourth of July Recipes!
ONE WEEK until 4th of July. Madness, I tell ya.
What have you been doing so far this summer? Sarah and Charlie’s wedding was positively PERFECT last weekend. We all caught the Dashboard/Third Eye Blind (throwback! and it was amazing!) show earlier in the week and then celebrated the big day on Saturday. Baltimore readers– last Saturday night’s storm. Crazy, right?
Besides that, there hasn’t been much going on outside of my kitchen. Oh! I had an emergency trip to the vet this past week– Jude has been having neck pain and, naturally, I sobbed the entire time at the vet as he whimpered and cried in pain. The vet assured me I wasn’t a crazy dog mom, though you could definitely hear me crying in the entire office. Anyway he’s on some meds now and is back to his usual self. So am I. Phew.

Double Chocolate Zucchini Bread.
This moist and fudgy double chocolate zucchini bread will raise a huge question. How on earth are there vegetables in THIS?!
A story:
Looking for a snack, Kevin poked around the kitchen and unwrapped leftover double chocolate zucchini bread. He grabbed a plate and zapped the piece of chocolate bread for 15 seconds in the microwave. I watched as he opened the pantry, not a word said, and grabbed the peanut butter jar. Opened the drawer for a knife and slathered the warm piece of chocolate bread with creamy peanut butter.
It was at that moment I knew I married the right man.

Easiest Appetizer: Goat Cheese, Honey, & Fruit Crostini.
Crunchy toasted bread paired with a blend of honey and goat cheese is the perfect match for seasonal fresh fruit. Easiest appetizer ever.
Here’s a little somethin’ somethin’ I made the other weekend when friends came to visit. Earlier that week, I spotted a recipe on Delish.com for Strawberry Bruschetta. It called out to me. It was exactly the simple recipe I wanted for snacking pre-dinner. Knowing my friends (and let’s be serious, myself)– I added creamy goat cheese and sweet honey.
Let’s just say we binged on this for nearly an hour straight.
So much texture.
So much flavor.
Must stop eating.
Can’t stop eating.
I feel silly even calling this a recipe because it is, as the title suggests, the easiest appetizer. If you’re entertaining this summer, let this recipe take some work off your hands. The amount of praise coming from such a simple recipe made me giggle. “Little do they know! Muhahaha.” (My evil laugh.)
