Favorite Snaps from Sarah’s Wedding.

Happy Saturday, bakers! Doing anything fun this weekend? While I’m finalizing some book tour details, I want to share some super special photos with ya. Is anyone else in love with looking at other peoples’ wedding photos? It’s one of my new hobbies. Browsing Pinterest and stalking wedding pics that aren’t my own.


Anyhoo.


My sister and brother-in-law had their especially stunning wedding day back in June. Sarah and Charlie got married in Baltimore, a city where they met and started their life together before moving to St. Louis. (I’m going to St. Louis on my book tour! The full book tour schedule will be posted on my blog this Monday. Check back!)


Out of all 900 photos taken by my dear friend Megan Brodie Photography, here are a few favorites capturing the day. The breezy waterfront, vibrant shades of purple, and all the romantic details that made up June 20th!

Brown Sugar Buttermilk Banana Donuts with Dark Chocolate Glaze.

Ummmm. Quite the long name for sucha cute little donut, no?


Baked banana donuts covered in a silky smooth dark chocolate glaze-- so decadent, yet totally simple to make!


And to be totally clear, these are baked brown sugar buttermilk banana donuts with dark chocolate glaze. I wanted to save myself from an embarrassingly long recipe title, so I removed one word. Sneaky.


Today’s donuts came to life after I spied a very sad brown spotty banana in my fruit bowl. I normally loooove eating tragic looking bananas, but it was Friday and I felt like seizing the day. With donuts!

Can you handle that silky smooth dark chocolate glaze??!?!! We’ll get to that in a minute. First, the donuts. They taste like little rings of banana bread. And you know what that means right? Baking Basics: Dutch-process & Natural Cocoa Powder.

Welcome back to my beloved baking basics series where I blab about nerdy baking things. If you’re a curious baker like I am, grab a cup of coffee with me and stick around! Especially if you like chocolate.


Today I’m demystifying the difference between dutch-process and natural cocoa powder. Like this head-scratcher, the difference between these two types of unsweetened cocoa powders is beyond confusing. When I first began, most explanations I saw on the internet left me even more puzzled than when I started reading. So, let me break things down for you in regular terms.


What is the difference between natural cocoa powder and dutch-process? Everything explained here!


There are two types of unsweetened cocoa powder: dutch-processed and natural. The two have different chemical properties and, therefore, different little jobs in a recipe.

Healthier Treat: Dark Chocolate Sea Salt Almonds.

I’m really, really excited about this “recipe.” For many reasons!


(1) Chocolate.


(2) It’s DARK chocolate. ♥


(3) Simple. 4 ingredients.


(4) Wholesome and healthy. Well, compared to skillet brownies at least.


(5) Sweet and salty! Sweet and salty!


These were inspired by a carton of Trader Joes sea salt & turbinado sugar chocolate almonds that Marie brought with her when she visited. Aka the snack I COULD NOT STOP EATING. Have you ever tried them before? If so, you know the struggle.


Dark Chocolate Sea Salt Almonds


Turns out, making them at home is cheaper. And homemade always tastes better than store-bought. Case in point. (←pop-tarts!!)


The number one ingredient is, duh, almonds. Since there are so little ingredients in this snack, make sure you’re using high quality. The almonds? Diamond of California. No ifs, ands, or buts. Fresh, unsalted, nutrient-dense whole almonds. Doesn’t get much healthier than that! And now, the chocolate.

Remember, quality ingredients are key. Use pure chocolate (not chocolate chips). I opted for bittersweet chocolate, but semi-sweet works just as well. If sweeter chocolate is more your style, milk or even white chocolate works too.


A helpful tool = this 3-piece dipping tool set. These inexpensive tools will be your lifesaver when you begin making Sally’s Candy Addiction recipes next month! I use the 3-pronged tool for these to help lift the almonds out of the chocolate pool and shake off as much excess chocolate as I can. It helped me separate the almonds so I wasn’t left with chocolate almond clusters– rather, individual chocolate almonds.


The finishing touch is a sprinkle of sea salt and turbinado sugar (I use Sugar In The Raw). Any coarse sugar works! I loooooove the added crunch the sugar gives and the flavor balance of the sea salt. The nuts are wonderful simply coated in chocolate, but the light sprinkle of sugar & salt turns them up about 10 notches.

Dark Chocolate Sea Salt Almonds


Yield: 1 and 1/2 cups


Prep Time: 25 minutes



Total Time: 1 hour











A chocolate treat to feel good about!





Ingredients:

6 ounces bittersweet or semi-sweet high quality chocolate
1 and 1/2 cups unsalted raw almonds, such as Diamond of California Whole Almonds
sea salt
turbinado sugar (or any coarse/raw sugar)

 






Directions:

Line a large baking sheet with parchment paper or a silicone baking mat. Set aside.
Melt the chocolate in a double boiler or (carefully!) use the microwave. For the microwave, place the chocolate in a medium heat-proof bowl. Melt in 30 second increments, stirring after each increment until completely melted and smooth. Alternatively, you can temper the chocolate. If tempering, do not store finished nuts in the refrigerator.
Stir the almonds into the chocolate, making sure to coat each one. Using a dipping tool or a fork, lift the almonds out of the chocolate one by one or only a couple at a time (you don't want them all sticking together!), gently tap the tool/fork against the side of the bowl to release excess chocolate, and place onto prepared baking sheet. Repeat with remaining almonds.
Sprinkle almonds with a little sea salt and turbinado sugar, then allow chocolate to completely set. I placed the baking sheet in the refrigerator to speed it up!
Store chocolate covered almonds in the refrigerator for up to 4 weeks.





Additional Notes:

For extra flavor, try toasting the almonds first! Simply spread them out onto a large baking sheet and bake for 10-12 minutes at 300°F (149°C). Allow to slightly cool before coating with chocolate.

Haaaaaappy Monday!


Another summer weekend gone in the blink of an eye. I’m uncomfortable with how much “back to school”-age I’m seeing around every corner. To escape from reality, you could find me at the beach all weekend.


Is it just me or do some things just taste better at the beach? Like, corn on the cob. Actually, that’s always fabulous. Ok, juicy watermelon? Mmmmm. Cheesy pizza, chocolate chip cookies, loaded nachos, iced coffee, mango margaritas. Oh! And thick buttermilk pancakes from the diner. Favorite! Don’t tell my recipe I said that.


So after all those epic summer eats, I came home to a couple leftover zucchini fritters. These crispy rounds show summer who’s boss. I don’t even know what that means but they’re definitely the best use for your zucchini and answer to your weeknight dinner prayers. I CAN’T GET ENOUGH.
