Tonight is mabodofu (tofu with spicy minced topping), the Japanese version of the Chinese dish. This is a family favorite. I’ve used various recipes over the years, but my favorite is from “Harumi’s Japanese Home Cooking” by Harumi Kurihara. Tonight instead of meat, I’m using Boca burger so it’s completely vegetarian.
