see me in the april issue of vogue magazine!

I had such a great time at the photo shoot for Vogue magazine. It was at Animal Acres! I got to lie right under a pig hang out with some cows and sit in a barn with a bunch of cool turkeys chickens and ducks. Plus the onset motorhome was run on bio-diesel fuel and they were playing groovy music! It was a beautiful fun day. Even the bathroom had Seventh Generation babywipes and a candle. The food was all plant-based and all was groovy! It was an amazing surprise to show up to a motor home like this. Yay Vogue!

Anywho the April issue of Vogue is out on newsstands now. If you're a subscriber you probably got it a couple of weeks ago but if not check it out!

my delicious dinner at jean georges

When I was in NYC recently I had dinner with a my new friend Joel and my friend Doug at a restaurant called Jean Georges .

First off the maitre d' Alex Wolf happened to be vegan! How great is that? The main dude at a super fancy pants restaurant is vegan! Anywho Jean Georges made the most lovely vegan tasting menu and the dessert was wonderful too. It was a great meal! I'll be going back there for sure.

I highly recommend it if you find yourself in New York. It's definitely a special occasion kind of place so go there when you've got something to celebrate!

run and go see the documentary i am!

There is a film playing right now at select theaters called I Am. It's a really well-done documentary by Tom Shadyac the filmmaker who directed Ace Ventura: Pet Detective The Nutty Professor and Bruce Almighty .

A complete departure from Shadyac's huge comedy blockbusters I Am is an earnest inspiring look at how human empathy can help to solve some of the world's big problems. It's so thought-provoking and so exciting that it's been made. It's very easy to watch and contains nothing upsetting but it will inspire you and has the potential to awaken people who are asleep. I'm lucky enough that my sweet and wonderful husband took me to see it last night. I had no idea what I was going to see and this film ended up being such a treat.

When I saw I Am I also saw the trailer for Forks Over Knives – and it is sooooo exciting! I got all choked up just from the trailer. I'm so happy this film is out there! It comes out May 6 so spread the word as far as you can about this one – make it your mission to get the world to see it!

Anywho I Am is in theaters now so please go see it and bring all of the people you know…everyone! It's a good time!

I can't wait to hear what you think of I Am !

my mochi waffle breakfast

I was on a kick and had the mochi waffle from my book p. 286 for breakfast a lot. It takes just ten minutes…yum!!! If you haven't had this you really must! It's superhero and it's delicious and quick.

Mochi Waffles Drizzled with Lemon-Walnut-Rice Syrup

Ingredients

1 cup walnuts
1-1 ½  packages plain mochi Grainaissance brand is good
½ cup brown rice syrup
Juice of ½ lemon

Steps

Toast the walnuts in a dry skillet over medium heat until just starting to turn golden and fragrant about 5 minutes stirring often
Transfer to a bowl to cool and chop coarsely
Set aside
Preheat a waffle iron
Cut a package of mochi into 3 large pieces widthwise
Slice each piece into long fingerlike pieces about 3/4" wide
Using 6 to 8 strips for each waffle place the mochi strips on the hot ungreased waffle iron and close the top
Cook until puffed and slightly crispy but not too hard and dry about 3 minutes or until your waffle iron signals that it's done
Remove the waffle and place on a plate do not stack the waffles because they will stick together
While the waffle cooks combine the rice syrup with 3 T water lemon juice and toasted walnuts in a saucepan
Stir together over medium heat just until warmed
Pour over the waffles
Serve and eat waffles as soon as possible – they are best hot and crispy!

What's your favorite breakfast dish?

a documentary i highly recommend

I just watched a documentary called Control Room and found it really fascinating.

Made in 2004 it's about the war in Iraq and the perception of the U.S. from the perspective of Al Jazeera the primary television news outlet in the Arab world. I learned a lot and I think it's a great doc for people to see especially given the conflicts occurring across the Middle East right now.

Have you seen Control Room? What did you think?

my favorite snacks lately

Sometimes I get snacky and need something sweet or refreshing. Here are some of my favorite snacks lately:

Carob ChipsSunspire makes good dark chocolate vegan chips. You can have a nice little half a handful of those when you're feeling spunky and have no dessert in the house. I recommend them as a dessert snack!

Dried Mango - Those guys are so good; they're like candy. I cant stop eating them!

Cucumber Water – Cutting up cucumber and putting it into water is a lovely and refreshing way to stay hydrated.

A good old-fashioned artichoke – they're not in season right now but I think they're coming soon! They're so good!

What are your favorite snacks?
