RAINBOW SALAD

Rainbow Salad

Update your everyday salad by topping it with fruit, nuts, and veggies for power packed combination!

Serves 2 as a main dish or 4 as a side dish

Ingredients

1 head red leaf lettuce, shredded

1 large orange, peeled, pitted, and diced

1 cup seedless grapes

1 cup fresh blueberries

2 stalks celery, diced

1/2 teaspoon freshly ground white or black pepper

Directions

Combine all the ingredients in a large salad bowl and toss.

Per Serving: 249 calories; 3 g fat; 10% calories from fat; 10 g protein; 60 g carbohydrates; 39 g sugar; 17 g fiber; 29 mg sodium

ROAD TRIP TIP

The summer road trip is a part of our culture,  but long hours in the car can derail your exercise routine.

 

One of Marilu’s healthy habits is finding pockets of time to exercise.  She builds time into the trip to step out of the car and move.  She travels with her resistance bands and doesn’t hesitate to get in a good workout at the gas station or rest area.  What?  Did you think that she had personal trainers meeting her en route?  This isn’t a program for the Hollywood Elite……. Marilu’s plan works for EVERYONE !

Forget what you’ve heard about the lazy hazy crazy days of summer.  Lazy never applies to Marilu.  August is a busy month for her and it can be wonderful and busy for you too !
