BACK TO SCHOOL LUNCHES

Even in the finest restaurants the chefs are aware that “plating” your food has an effect on appetite.  If you want your kids to be drawn to healthier foods make it interesting.


Ditch the white bread sandwiches and try wrapping healthy ingredients in a tortilla and slicing it into pinwheels.  Include condiments as a dip instead of a spread.  It keeps them from getting soggy and makes lunch more fun.


If you have time in the morning set ingredients out and let the kids stuff their own pitas.  You choose what’s acceptable and let them choose from that on their own.  Young children love the sense of independence and you’ve already approved what you’re offering.


Be sensitive to the cafeteria “climate”.   Your child may like being the only one with a brown bag or they may want the partitioned boxes.  Know what makes them comfortable and work with them.  You provide high quality, nutrient packed, food and let them help with their own suggestions.


Teachers expect an after lunch “slump” in attention.  Let your children be the exception by packing lunches that fuel their bodies.

SNACK SMART, SAVE MONEY


 


If you’ve already swapped out that fatty potato chips for a puffed veggie version let’s go a step further.  How about a nutrition packed snack of kale chips?  Satisfy the craving for a crunchy salty snack while saving money.  At less than 50 calories per cup, they’re just a fraction of the calories as the store-bought stuff and so inexpensive that an entire batch can be cost less than a dollar to make.


 


Just spray washed kale (torn in bite sized pieces) with cooking spray or toss in a bowl with high quality olive oil, season with sea salt, and bake in a flat layer at 350° for about 15 minutes.


 


Get creative and add the seasonings you enjoy most.  Spray with Bragg’s or sprinkle with nutritional yeast and/or sesame seeds.

MEATLESS MONDAY

SPICY COLD SOBA NOODLES


(This dish is delicious both cold and at room temperature.  It’s the perfect take along to a picnic, a hike, a pot-luck. )




1/3 cup soy sauce
1 Tablespoon molasses
1/4 cup sesame oil
1/4 cup tahini
1 Tablespoon barley malt
1/4 cup chili oil
3 Tablespoons balsamic or red wine vinegar
1/2 bunch scallions, white and green parts, thinly sliced
salt to taste
1/2 pound soba noodles (Japanese buckwheat noodles)

Place soy sauce in a pan over high heat and reduce by half.  Turn heat to low, stir in molasses, and warm briefly.  Transfer to a mixing bowl.  Add sesame oil, tahini, barley malt, chili oil, vinegar, and scallions, and whisk to combine.  Season to taste with salt, if desired. 

Bring a large pot of salted water to a rapid boil.  Add noodles, bring back to a boil and cook, stirring occasionally, until they just begin to soften, about 3 minutes.  (Soba noodles can overcook very quickly so stay nearby.)

Have ready a large bowl of ice water.  Drain noodles, plunge in ice water, and drain again.  Place in a colander and rinse well under cold running water.  Combine noodles and sauce, toss well, and chill.

Healthy Weekends !

Make the weekend about more than catching up on chores and rest.  Use the time to recharge.  Get out and enjoy the fresh air.  Try a new walking trail or a new activity.  Visit a farmer’s market.  Even in the heart of a city you can find fresh produce that’s local to your area.


 


Fresh air and whole foods can equal a new you by Monday !
