POTATO KUGEL

Passover begins a week from today.  This recipe from Marilu’s book,  Healthy Holidays, is a keeper.


 


3 Tablespoons olive oil


1 large organic Spanish onion, finely chopped (about 2 cups)


2 garlic cloves, finely chopped


3 pounds Yukon Gold potatoes, peeled


3 Tablespoons finely chopped organic flat leaf parsley


1/2 cup matzo meal


1 Tablespoon sweet paprika


1 teaspoon baking powder


1 egg and 4 egg whites


2 teaspoons salt


1 teaspoon freshly ground black pepper.


 


Pre-heat oven to 375


 


In a large nonstick skillet over medium heat, heat 1 and 1/2 Tablespoons of the oil  Add the onion and garlic and saute until the onion is lightly browned, 5 to 8 minutes.  Coarsely grate the potatoes into a strainer and press out as much liquid as possible.  Transfer the potatoes to a large mixing bowl and stir in the sauteed onion, parsley, matzo meal, paprika, and baking powder.  Add the egg and egg whites and mix well.  Add the salt and pepper; the kugel should be highly seasoned.  Spoon the kugel mixture into a 7 x 12 inc ovenproof baking dish, lightly sprayed with cooking spray, and drizzle the top with the remaining 1 and 1/2 Tablespoons olive oil.  Bake the ugel until the top is lightly browned and the filling is cooked through, about 30 to 40 minutes.  (Test with a metal skewer for doneness.)  Cut the kugel into rectangles or squares for serving.

UNFORGETTABLE

Tonight on CBS…UNFORGETTABLE returns for a new season!   The character of Carrie Wells (played by Poppy Montgomery) uses her gift of HSAM (highly superior autobiographical memory) to help her in her work as a detective.   Marilu is a consultant on the show being in the unique position of having experience working on so many hit shows as well as being one of the handful of people in the world to be documented to have HSAM.


 


If you haven’t yet seen the show check it out TONIGHT.  Check local listings for time and channel.  The show is intriguing, the acting is outstanding, and Marilu has a recurring role as Carrie’s aunt.

Caffeine and Nicotine


 


OUCH !     Has your caffeine consumption passed the point of being an occasional treat and turned into a “MUST HAVE IT” kind of thing?   While it’s still more socially acceptable than nicotine, caffeine is also a drug and it’s not without it’s own harmful effects on your health.


 


Don’t be afraid to learn more about caffeine and nicotine.  The benefits of just cutting back will show in your health and in your wallet.


With a cup of coffee costing between $1.00 and $2.00 (and we’re not even talking about lattes, Americanos,  whipped, foam, non-foam, mocha, or any of the specialty drinks that could have you dropping a five dollar bill) we think there are better ways, healthier, natural, less expensive ways to find your energy.


The flip side of caffeine to get you going is a cigarette to “soothe” you.  Besides the obvious damage to your health, risk of emphysema, heart disease and cancer, there’s the smell, the aging factor and the fact that a pack of cigarettes can cost upwards of $5.00 and as much as $10.00 depending on where you live.


 


Wouldn’t you like some help in getting free of these addictive habits?  After all there’s a reason we’re talking about this on April Fool’s Day.  Don’t be foolish with your money or your health.  These are tough habits to break but we want to help.

EAT RIGHT/SAVE MONEY

Eating healthy food doesn’t have to strain your budget.  IN FACT, a plant based diet can save you money as you move away from expensive processed foods and choose produce that’s in season.  The extra nutrition you’ll be consuming will satisfy your hunger cravings better than empty calories that don’t let your brain know when you’re full.


 


Add to that the fact that a healthy diet can keep you from having to buy over the counter remedies such as laxatives, antacids, acne medicine, and decongestants.
