Cancer Screening…educate yourself

If you were in chat with Marilu last week you know that there was conversation regarding the difference between Mammography and Thermography, with some members sharing their experience with both types of testing.  We all know the importance of regular screening and we encourage you to speak with your doctor about what's right for you.  Insurance companies vary in what they will cover so you'll want as much information as possible before you pursue one avenue over another.  This article may serve to help you.

Orange Cranberry Muffins (Vegan)

These muffins are delicious, and have a great seasonal flavor.  Perfect for brunch, to pack for a day of hiking or to add to your lunch. 


2 cups flour


1 and 1/2 teaspoons baking soda


1/2 teaspoon salt


zest of one whole orange


1/2 cup sucanat (plus 1/4 cup for tossing berries)


3/4 cup almond milk


1/4 cup fresh squezzed orange juice


1/3 cup canola oil


1 teaspoon vanilla extract


1 teaspoon white vinegar


1 cup fresh whole cranberries


1/2 cup chopped walnuts (optional..but highly recommended)


_____________________


Combine dry ingredients and zest


Combine sucanat, milk, O.J. oil, vanilla and vinegar


Add dry to wet and stir in cranberries that have been tossed with sucanat


Fill paper lined muffin tins 1/2 full.  Add crumb topping if desired.  (recipe follows)


Bake at 375 for 15 minutes

Topping:


2/3 cup sucanat


2/3 cup flour


1/2 cup chopped walnuts


1/2 cup Earth Balance margarine


Mix all ingredients together until well blended

FLAX

You might be adding flax to your diet but do you know WHY?  (how many times do you hear someone say "It's supposed to be good for you" but they don't know what's so good about it?  Here's the scoop on Flaxseed:


There are 3 potentially beneficial components; plant based omega 3 fats, fiber, and disease fighting compounds called lignans. A study done at The Mayo Clinic suggests that 40 grams of crushed flaxseed can cut the frequency of  hot flashes.  There are several reports that it may lower "bad" cholesterol, including an interesting study in China that found those benefits more pronounced in women.  (Note: There are some doctors who suggest that pregnant and nursing women avoid flax until more studies are done.)


Educate yourself to know what's right for you. If you're adding flax to your diet it's important to know that the benefits come from crushed flax seeds since whole flax seeds are not easily digested.

It's (not so ) Complicated

Life is busy, life is stressful,  and commitments pile up like cars on the freeway.  It doesn't have to be complicated.  Take a look at a few suggestions to un-complicate your life.  Then make your own list of what you need to do to keep sane and keep on moving.


1. EAT CLEAN …Nothing will mess with your emotions and complicate your life like a sugar high, constipation and break outs. 


2. RETREAT … We talked about this on the first day of the "Ever Grateful" class.  Take time for yourself.  Turn off the news for a day, put aside anything that's non pressing and just regroup.


3. SAVE THE DRAMA FOR YOUR MAMA …Walk away from gossip, unpleasantness and anything else that brings you down.  Think "higher plane".


4. RETHINK THAT TEXT …Is it really THAT important or can it wait until you've got a free minute?  Just because you CAN multi task doesn't mean you HAVE to. 


5. SEX …What are you waiting for?  Just enjoy. Stop waiting for the perfect time, or the perfect body.  Enjoy the one you have now. 


6. THROW SOMETHING OUT …There are things in that mending pile you don't even LIKE.  If you did you would have had them altered by now.  Give them away, throw them away, or cut them up and use them to wrap presents.  Just get that ugly old pile out of the corner.


7. BE IN THE MOMENT …Don't let craziness build.  Enjoy the moment you're in so you can remember it later.  Every day holds something we can enjoy and/or learn from. 


This is a tip of the iceberg list.  Make your own.  You should have no trouble hitting 10, 20 or a hundred  reminders that will make your life less complicated.  Post them on the boards.  Sharing and support are what makes this community special!

Meatless Monday…Rigatoni and "Sausage in Tomato "Cream" Sauce

Serve this dish to company.  They will never know they're eating a vegan dish.  They will only know it's delicious.


3 cloves garlic, minced


1 sweet onion chopped


2 small zucchini, chopped


1/2 pkg. Gimme Lean Sausage, crumbled


1 Tablespoon olive oil


2 Tablespoons Earth Balance


1/4 cup vermouth


1/4 cup soy or coconut creamer


3/4 cup almond milk


1/2 t. each, sea salt, pepper, ground sage


5 plum tomatoes


3 ounces tomato paste


5 leaves basil sliced in chiffonade


In hot pan add olive oil and saute garlic, onion, zucchini and "sausage".  When sausage is browned add vermouth and allow to simmer for 3 to 5 minutes.  Add Earth Balance and "cream", salt, pepper and sage.


Cook pasta according to directions.  (Rigatoni and ziti rigati are both good choices.)


While pasta is cooking, chop tomatoes and add them to the sausage and veggies in pan.  Stir in tomato paste and add almond milk a small amount at a time until desired consistency. ( Thin sauce with water if needed.) Adjust seasonings.


Add cooked, drained pasta to sauce in pan and stir to coat.


Move to serving dish and top with basil chiffonade
