You can make baked french fries - 425 oven, cut potatoes into fries, place into a baggy, pour some olive oil, rosemary and a crushed garlic clove or 2 and Salt and pepper. mix it up and place on a baking sheet with a silpat or foil. bake for 30 minutes and turn over once.

Soup, I make a sweet potato soup - make a soup base - saute onions and garlic w/ butter and add spice of choice - mexican style oregano, cumin, chili powder or french - herbs de provence, add peeled potatoes, then add chicken stock.
