Crown of Columbus (Erdrich) is kind of interesting. And...The Discoverers. That is Boorstin. Covers time and discovery from pretty much prehistory.

Uhm, I haven't read it but my mum would recommend "This Thing of Darkness" by Harry Thompson - it follows the journey/explorations of Darwin and Fitzroy.

I'm just finishing Tony Horwitz's A Voyage Long and Strange: Rediscovering the New World, which is a fascinating mix of travelogue and history looking at everyone who came to the Americas from the Vikings to the Pilgrims.Highly recommended.
I don't know if this is what you're looking for, but it certainly deals with that era in a unique and fantastic (in the literal sense) way. There's a book by Jeanette Winterson called Sexing the Cherry that is one of those short, sweet little novels that I almost guarantee you will walk away from feeling somehow altered. It's hard to explain, but you should look into it. Even if it's not what you're looking for, it shouldn't be missed.
