276352 Anything written by Earnest K. Gann such as Fate is the Hunter (non fiction) and The High and the Mighty (fiction) which also became a very popular movie in the late 1950s with John Wayne as the lead man.

Any other book about flight.

I would suggest that you read Richard Bach. His book's main topic is always about flight specially his first three books.
I liked the most his Jonathan Livingstone Seagull for its philosophical insight.

1199525 Whilst The Hitchhiker's Guide to the Galaxy 1-5 is not a book about flying, it does have a very good explanation of flying:

"There is an art, or, rather, a knack to flying. The knack lies in learning how to throw yourself at the ground and miss. Pick a nice day and try it. "

Nophoto-u-25x33 The Summer Birds by Penelope Farmer is about a group of children who learn to fly. High on wonder and magical feeling.
