A couple of my favs have already been mentioned but Simon Winchester (Krakatoa esp.) and Dava Sobel (Galileo's daughter) rate high on the list. Bill Bryson's 'English Language the mother tongue' is a great read as is his 'small history'.

A Short History of Nearly Everything by Bill Bryson is amazing. I've read it twice, and then I got the illustrated version! Is there a particular area in non fiction that interests you?
my favorite nonfiction book: A Brief History of Time by Stephen Hawking
other good ones: Orientalism by Edward Said, People's History of the United States by Howard Zinn and Freakonomics by Stephen Levitt
One of the best: Critique of Cynical Reason by Peter Sloterdijk. Published by University of Minnesota Press (January 1988)
