I've been hearing a lot of good things about Cloud Atlas, by David Mitchell. I haven't read it, but I trust my sources. Also, in terms of creative use of language, if you haven't read The Tin Drum, by Gunter Grass, give it a go.
In terms of precision and grace, I don't think you can top James Joyce.
As for more contemporary work, I am a fanatical devote of Jesus' Son, by Dennis Johnson.
There's hundreds of choices!
I'd add Sarah Van Arsdale to the list. Her book Toward Amnesia is clearly the novel of a trained poet -- there's so much attention to every word, and the movement of the book is very quiet, contemplative.
