I KNEW it!! I knew what the govt has been spoon-feeding us about food was wrong and this book shows it. We need to quit eating junk that is manufactured, no matter how "good" they say it is for us. The more claims a box or bag makes about it's nutritional value, the worse it is for you. That goes for margarine, too. Quit eating that crap. There is NO SUCH THING AS MARGARINE WITH ZERO TRANS-FAT, no matter what the container says. And hey, I'm not even done with the book yet ;-)
ETA: I've finished the book and will not look at food the same way again. Food is more than just something you shovel in in order to feel full. It is about fueling your body in the most healthy manner possible and what passes for food these days in the stores is killing us. There is no science to back up that a low-fat diet prevents heart disease. None. And yet we continue to buy the rhetoric and kill ourselves eating margarine and low-fat products loaded with manufactured ingredients designed to take the place of fat.
We are fatter, sicker and more malnourished (yes, fat and malnourished can co-exist) than the average third world country. Food is more than just the nutrients they carry. You cannot break our nutritional needs down into what vitamins and minerals our bodies need most. It all works together and when we separate the nutrition from the food, we all lose. If it keeps up the way it is we will be eating nothing more than vitamin fortified Frankenfood and we will be dropping like flies. It's like he says: Eat Food. Not much. Mostly Plants. Wiser words were never spoken with regard to the way we eat.

I'm almost finished and I have to say it is a definite must-read for anyone who appreciates real, whole foods. The unfortunate thing is that for all the "real" foods we can get at the store, they've still been so messed with (genetically modified, hybridization) that we still aren't getting the same food we would have gotten 50 years ago. A carrot isn't necessarily a carrot anymore :-)
