Read from May 04 to June 25, 2012 — I own a copy

I loved this, and will be thumbing through it in the kitchen lab for years, I'm sure. I like his "not quite a recipe, more like a life lesson" approach, his insane comprehensiveness (which could be baffling and overwhelming to someone not already fermentation-focused, perhaps) - and it's nice to find Sandor in this new place, from where he was with Wild Fermentation.

In the middle of the topics/chapters that don't call my name, it sometimes felt like several Ph.D. dissertations rolled into one. And that's because it's a huge achievement. I have made many more things inspired by this than I had gotten around to from Wild Fermentation. And a lot of them were innovations of my own, so it's a very emboldening sort of read. Let the wild fermentation begin!
