The Doctrine and Covenants is an interesting read for those who are interested in seeing how early Mormon leaders used "revelation" to control various members. It's also interesting for the study of the confusion in the early development of Mormon doctrine as Joseph Smith received "line upon line" as necessity dictated.

The Pearl of Great Price is one of the more interesting books of Mormon scripture. The books of Moses and Matthew are Joseph Smith's rewriting and expansion of sections of Genesis and Matthew, and the book of Abraham is a ridiculous mistranslation (if it can even be called a translation) of a papyrus containing the Egyptian Book of the Dead. Other materials include Smith's final rendition of the story of his call to prophesy (which conflicts with two earlier accounts) and the 13 Articles of [Mormon] Faith (number thirteen, my personal favorite, hints at how open Mormonism was in its early years: http://lds.org/scriptures/pgp/a-of-f/...).
