So far, rivetting. A fantastic inside-view of the four-start restaraunt business. Facinating for any foodie.

Really an excellent book. Story woven in with facts of all sorts about high end dining. Lots I never knew and quite an insight into how much training happens with the service to make it all work so well. An unbelievable amount of detail is known and understood.

I also got a lesson in vocabulary and the whys and wherefores which was interesting.

A perfect reference book in the event I ever need some inside knowledge of the restauraunt industry.

Also - this book in part explains Hell's Kitchen episodes.

Victoria Ha! I had all but forgotten this book until now. Read it several years ago as "homework" from one of my restaurant bosses. :D


Redparrot I completely understand how this would be homework. It is a compelling read. And for the record, I *totally* want to make one of my nano family names Bichalot. Snork.
