Every time I read from this book, I had to put it down and make something to eat.
The memoirs of a waiter at Thomas Keller's Per Se in New York, Phoebe Damrosch does an admirable job of letting us see into a world that we may experience as a customer, but rarely experience from the other side. I certainly never understood the full extent of preparation that goes into the high end dining experience. I have a greater respect for the professional server and for the cost of the meal since reading this.
Damrosch's training for her first position in the restaurant, just setting and and clearing tables, is extensive and takes months. The book excels when giving us a peek at how one of the world's greatest chefs runs a restaurant, but is less effective in the sections where she discusses her own personal life. Honestly, I really only wanted to hear the behind the scenes kitchen drama.
Sweeter and kinder than say, Anthony Bourdain, Damrosch isn't necessarily deep, but she's pal...more
