My husband and I are loving this cookbook. I was looking for a chef who's approach and style called to me, and I found it in Ellie Krieger. No, the recipes aren't all low-cal/ low-fat, but it's the kind of fat that makes all the difference. We have actually lost quite a bit of weight since buying this book, and I haven't felt like I was dieting at all.
I wanted a cookbook that relied on fresh ingredients that I could easily use and buy (but I love that she often uses frozen and canned veggies to simplify), recipes that my southern meat-and-potatoes husband would also enjoy eating and cooking, and recipes that didn't take a sous-chef to make. I am a novice cook, but I'm expanding my repertoire by leaps and bounds with her book.

Fried Rice with tofu and Edamame (We make this every week)
Mac n' cheese
Grilled Pork Loin
Carrot Cake Cupcakes
