I don't normally review cookbooks but since I read this one like a text book and keep referring back to it, I suppose I will. First of all, this is NOT a book for the casual baker. This is a book for someone who truly is interested in the chemistry and minutia of bread baking. It is not simply a list of recipes; it is a handbook of techniques and ideas to help develop the casual bread baker into a serious bread baker. Years ago I baked almost all of my own bread...several children and many busy life interludes later, I'm hoping to get my mojo back with this. I found this truly inspiring.
