The only reason I'm not giving this book 5 stars is because of the eye-crossing (or in my case, ear-crossing since I listened to it on audio) details in food science, but that's just me. I understood everything; there was just a lot of minutae. This book is excellent for anyone who wants to know everything about what we put into our bodies in the form of "food" (the quotes are intentional). The big AH-HA for me was near the end the author said (and I'm paraphrasing here) that what we spend our money on food-wise is like our vote for that type of food industry to continue.
