To write this book, Gabriel Thompson worked at three different jobs that are mostly worked by immigrants (both legal and illegal) over the course of a year. He spent several months working as a lettuce picker, working in a poultry plant, and as a bicycle deliveryman for a high end Mexican restaurant in New York City. It was a really interesting book with lots of insights into what it's like to do these types of jobs and the reasons why this work mostly falls to immigrant workers. I would highly recommend this book.
