I heard a review of this book on Splendid Table and had to try their bread baking method. They broke a loaf open over the air and it sounded delicious! It felt counter-intuitive to mix up such a wet bread dough and then just walk away without kneading. But wow! Plus, there are still four quarts of dough proofing in my fridge for tomorrow.
