I recently checked out (and then bought) the newest cookbook by Isa Chandra Moskowitz, Vegan Cookies Invade Your Cookie Jar. I have several others by her, but this one is the most user-friendly one, in my opinion. All of her books are great, and I’ve made things from them, but some of her recipes can be a little involved. This book has many recipes that can be done quickly, though. So far, I’ve made the Caramel Pecan Bars (with sea salt on top!), Sweet Port Sesame Cookies, and Lemon Bars. The caramel pecan bars were a tasty substitute for pecan pie at Thanksgiving, a little sweeter than the pie because of the chocolate chips I added (it’s good to improvise!). The port cookies were toasty and sweet, and the port flavor bakes up nicely–they go well with coffee, morning and night. I was especially pleased with the lemon bars, though–the topping set up well and the crust was nice and light, and the lemon flavor was spot-on. Next on my list are her versions of rice krispie treats and black-and-white cookies.

Her recipes do require investment in a few items you might not normally have in the pantry–brown rice syrup, agar agar and arrowroot powder were just a few things I had to get. They’re frequently used in her recipes, though, and will last quite a while, so it’s worth it to buy them. --Candice
