You're thinking of Guy Ritchie, the ex-Mr. Madonna. Layer Cake was directed by Matthew Vaughn, whose other films are Kick Ass, X-Men First Class, Stardust, and the recent The Kingsman.

There's no "official" film adaptation of Red Harvest to my knowledge, but Akira Kurosawa's "Yojimbo" and the Coen bros' "Miller's Crossing" are both "inspired" by the Hammett book and I'd say both are must-sees. Walter Hill's "Last Man Standing" and Leone's "Fistful of Dollars" are both takes on the Kurosawa so I guess are adaptations twice removed.

Simple. He is basically Stieg Larsson: a leftist journalist notorious for speaking truth to power. When writing a character who is essentially yourself, why not make him a chick magnet?
