I know this sounds frumpy, but I'd take the Old Testament--the poetry of Job, Ecclesiastes, Song of Songs, and Psalms. I'm working on a poem right now about Song of Songs.

I don't know what Ploughshares is seeking, because they haven't chosen any of my work. I do know that they have many guest editors, and they choose the majority of some issues. I've come closer with Ploughshares than with Tin House (personal versus form rejections).
Three is my limit, unless there's a contest/themed issue with an outside judge. For example, I still submit to Ploughshares, but I don't submit to Tin House, because I just don't have what they're seeking.
I look for themed issues if I'm going to submit blindly. I'll always check out the website link through Duotrope. Some literary journals, both online and print, are obviously not a good fit.
I use Duotrope. It's a very organized site, and it also inspires. You can track poems sent out, acceptances, rejections, and pending submissions. Duotrope also provides links to journals to submit (print and electronic subs) and a themed calendar that I think is more user friendly than the one in Poets & Writers. There are separate submission trackers and calendars for poetry and fiction. (I write both). It's a wonderful site and works on a donation basis. After I started using Duotrope, my submission consistency and my acceptances became much easier to track.http://www.duotrope.com/
I ordered Erin Belieu's book. What a great deal--to buy a book and make a donation! If any of you are considering this, let me recommend Peter Pereira's What's Written on the Body. It's a fabulous book.
