2219 Afternoon all! Sandi I'm not a big fan of actual turkey either I only eat it once a year during Thankgiving, and I dip in my cranberries just so I can get past the taste! Erika...poor child...you have had this thing forever! I hope you and sandi feel better real soon.

Love liver! Okay hate liverwurst but liver everything else, and Tamela I also raid the turkey at holidays after boiling the gibblets down I always fish out the heart, liver, gizzards and neck, and snack on them while I prepare the rest of the meal.

2219 Oh I plan on making books like that for my children! I have all the originals in my book, so I was planning on typing them all out, and making like a scrapbook with recipes and pics of the people who actually owned the recipes and give them to the kids for christmas presents!

2219 You two are making giggle, Will...water and ketchup? Oh now that makes me say ewww! And those Ramen noodles are definately on my shelf for the fend-fer-yourself days! And they were a fav of mine during my college days, I think I lived on those and mac-n-cheese. And Bologna is at the top of my foods-I-hate list, I don't think I've ever liked it!

2219 Oh I know! LOL I don't eat it, but my 15 yo son is just fine with it! But I'm sure he would rather have the pizza! Me? I prefer to make a big pot of soup and eat it on for a few days.

2219 I'm not offended at all Will, I totally understand, most everything I cook is from memory also, or just an idea I came up with. Sometimes if I can't remember exactly how to make something or if I make it and it doesn't taste right then I refer to the recipe and usually I see that I forgot something simple, but important!
Those pizzas sound like something I could keep around for my son on those days that I'm writing and forget to cook. I call them fend for yourself days...LOL They usually consist of soup in a can with PB&J I think he would like the pizza better!

2219 Afternoon all! Good to see everyone back! Erika I'm sorry you still feel bad, actually though I think the whole state of Ohio is sick, I have a cold, so does my dad (who lives three hours away) and where my daughter goes to college they have six cases of swine flu. It has to be this crappy weather!
To those who are using my recipes I sure hope you enjoy them. And Tamela you can also add chopped chicken to that casserole and turn into a one meal dish.
Will, I love that joke, it gave me my daily giggle! And I think I might have to text it to my girlfriends!

2219 Good afternoon everyone! It sure has been busy in here!
Erika so sorry you were so sick, I sure hope you are feeling better.
And Will that room sounds wonderful, good luck on finding a rug!
Sandi, for potluck I always do Broccoli Casserole and sometimes take a second dish of Nachos and Dip, either dish would be easy for you to do. Keep in mind these recipes are off the top of my head, but that is usually the way I cook, from memory so the spelling will be off.

Broccoli Casserole

1 bag chopped broccoli (cooked just enough to thaw)
1 medium sized box of minute rice (cooked)
1 small vidalia onion (chopped)
1 large can of cream of mushroom soup
2 large jars of cheez whiz
1 1/2 sleeves of saltine crackers (crumbled & seperated)

Combine all ingredients (only use half the crackers) into a large bowl, mix evenly. Pour mixture into a 9-11 casserole pan, top with remaining crackers. Put in pre-heated oven at 375 and cook until crackers start to brown, remove and let stand for 15 min. unitl serving.

Chip Dip

1 pound ground sirlion (browned)
1 package taco seasoning
2 large cans re-fried beans
1 jar nacho cheese
1 jar salsa
1 onion (chopped)
3 assorted spicy peppers (you can use whatever kinds of peppers that appeal to your taste buds.)
Garlic powder to taste
chili powder to taste
Southwest seasoning to taste
Shredded Cheddar Cheese

Combine all ingredients (except cheddar cheese) in a sauce pan cook over medium-high heat until bubbling, turn heat down and sprinkle with cheddar cheese cook until cheese melts. This dish can be put into a small crockpot and taken anywhere, when you get where you are going keep it on the warm setting, and sprinkle with more cheese serve with your favorite Nacho chip.

2219 Afternoon! Jenny I would love those recipes.
And Sandi I would give my eyeteeth to be in Florida with the heat, but thank God I'm not in Minnesota, they actually have snow already, and my friend in Canada had snow, rain, and hail all in the same day, so I'm glad that Ohio is not that bad yet! Brrrr!
Oh and one of my favorites for Christmas, is (I know I am spelling this wrong) Baclava, every year I get together with a girlfriend we grab a bottle of wine and spend the day making it.
Today on the menu is my son's favorite Salsibury steak with onion mushroom gravy, mashed potatos, and buttered corn. He loves it, I made the daughter happy when she came home last weekend so I might as well do something special for the son this weekend. Have a good weekend everyone and tasty cooking all around.

2219 Afternoon everyone, it is cold and rainy here, YUK! I think summer actully forgot about us this year. No cookiing for me either today, it is just me today soo...I probably will just fix myself an egg sandwich or something similar.

Chritmas cookies? Usually I do the old standard sugar cookie, chocolate chip, and monster cookies, then my hubby (the true baker in the family) comes up with a few different ones, but first I have to get through Halloween and Thankgiving then I will focus on Christmas, if I start baking too early the son and husband have the cookies eaten way before Christmas rolls around, I try to hide some, but...they always sniff them out. I would like to find a really good molasses cookie to try this year.

2219 Sandi I'm that way I always cook for an Army, I don't know why I guess I'm just wired that way, like today I was getting veggies to turn my chicken into stir-fry and my son is like Mom it's just us you don't need so much, needless to say, yep we will be eating Stir-fry tomorrow also. Sorry I haven't been here today, but I have been busy with marketing. Hopefully I'll have more time tomorrow!

2219 Yummy! Sounds great Tamela, I can't wait to try it!

Erika, when I make a pot of Chili it lasts for days also, sometimes by day three, I'll either make fries, for chili cheese fries, or hot dogs and use the chili for sauce, or I'll fix spaghetti noodles and use the chili instead of spaghetti sauce, and top it with shredded cheddar. That way my son (who hates leftovers) feels like he is getting something different.

2219 I know this may sound weird, but...an old family recipe which is actually my favorite food is meatballs and mashed potatoes. These meatballs are not swedish or italian, but I think possibly welsh or dutch, maybe irish. This recipe was handed down through the family by word of mouth. Only one written copy ever existed, of course it was a copy that I had written down while watching my mother prepare it, well...I lost the recipe...and I am now the only person left in the family that could possibly know it...I've tried several times to make this recipe by memory, it comes close but not exact. So I was wondering if anyone out there possible knows what I'm talking about and if they have a recipe close to it. The meatballs are close to meatloaf in the making, they are made on the stove not in the oven, they are simmered in tomato sauce or tomato paste, with lots of garlic and bell peppers. I also know that italian bread crumbs are used to hold the meatballs together. Anybody have any idea of what I'm talking about, or have a clue how to help me remember this recipe?

2219 It sounds as if everyone had a very hearty, good food weekend. Thanks Sandi that was really sweet. Sunday we had teriyaki pineapple glazed chicken, with scalloped potates and brownies for desert. Since it will only be my son and I for dinner this week, it looks like leftovers will be at the forefront, the Tacos will turn into Taco Salads, the leftover chicken will be sliced and become stirfry, with veggies over rice.
Tamela I will be looking foreward to that recipe.
Will the hot air balloon rally sounds like tons of fun!
Sandi here is the recipe I use for Collard Greens it is from Maya Angelou:

2 Smoked turkey wings
3 bunches tender collards
1 sweet onion chopped
2 hot red peppers
1 tablespoon sugar,
Salt and pepper to taste.
In large pot, boil turkey wings in chicken or turkey broth to cover for 1 hour. Pick and wash greens, discard large stems. Chop leaves coarsely. Add all ingredients to pot. Simmer for 1 1/2 hours, adding water or broth if needed. Serves 4.

2219 Hi Everyone! I'm so glad it sounds as if everyone is having a good weekend with lots of good meals. My daughter was sooo happy to get her favorites this while she was home. Leshawn I love Kale and collard greens, very good old favorites right along with wilted lettuce. Tamela I love Clam chowder, now what would it take to coax that recipe out of you? The best I have ever eaten was in Anguilla at a little no name restaruant in a bay. I thought I was in Heaven. It wasn't quite as creamy as what I'm used to in the states but it was filled with so much other stuff I couldn't help but fall in love with it and I made my hubby take me back there three times while we were on the island.

2219 Hi LeShawn, that soup does sound really great, I think we all want to give it a try! And yep the Daughter has made it home, ate a heaping plate full and run off to the homecoming game.

2219 Yep one day it was sort of warm and the next...ugh...storms blew in and we were worried about frost...in September! Thanks she is a freshman going to college three hours away and evidently she needs some comfort food. I'm glad I joined the group too, I'm hoping to come across some good new recipes, or maybe just some old favorites that I forgot about.
Oct 02, 2009 12:03PM

2219 Hi Sandi nice to meet you too, what a lucky lady you are living in the warmth of Florida, I'm in Ohio so the weather just stinks. And I probably don't have many southwest recipes either so I hope the group decides to tolerate me too. My weekend menu consists of well...my daughter is coming home from college, and has requested Cheeseburger French Fry Casserole and Taco's...I know not very elegant, or warming but I must feed the poor child her favorites...

2219 If I do Cornbread with Chili I make my Mom's mexican cornbread, it is a great side and mixes well with the spices in the Chili.
