And Tango Makes 3This might be better for slightly younger kids, but it's a great (and true) story about gay penguins and their adoption of a baby penguin.

Rebecca- I just discovered Skippy John Jones and my boys love him. But I totally have to disagree with the flap book thing. In our house all the flaps end up ripped off, which often results in half the page being ripped off along with some key pieces of text.
I still love being read to, but no one (meaning my DH) will read to me. So I've taken to books on tape. You may already know about these, but the Harry Potter books on tape are amazing. Jim Dale, who does the reading, is phenomenal!
I love that about Maisy too. I thought that his point in that article was more about how hard it is to be a parent. You're navigating all these pitfalls and somehow these little things, like reading Maisy for the umpteenth time, can make you feel like your head will explode.
There is an interesting article on toddler lit over at Babble

I can totally relate to the rereading of the same book over and over and over.
Tina, I have to agree with the recommendations of Mrs. Frisby and Rats of NIMH and Tales of the Forth Grade Nothing. One series that I would also recommend is the Geronimo Stilton series.

The adventure/mystery series really fun for kids that age and the words are "illustrated" for lack of a better work. So for example if someone was described as furry, the typeface of the word would be furry looking. I don't know if this is making sense.
Finally, I would do whatever works for your family. I think that is unfair for others to tell you how to parent without knowing your child or your situation.
I've got to second the Boynton books. Both my boys (18 mo & 4 1/2) love the silly rhymes and the illustrations. I'd also recommend Bear Snores On, which is available in board book format. There is a new Bear one, but only in hard cover and those corners are sharp!
