I love Donna Hay's books - both her food & photography. Steve mentioned New Food Fast, a favorite of mine. The Chez Panisse Café Cookbook is a good one, too. Finally (maybe!), an old stand-by is the New Basics Cookbook, a well-done reference book with super recipes.
