Don't get me wrong: I love Atkins. But I don't know what they were thinking when they put this cookbook together. Oh wait, I do know: they were thinking that total carb count is all that matters. Anyone who really understands low carb knows that it isn't just the total number of carbs you consume: where those carbs come from matters at least as much. I don't actually know much about the Atkins Diet except that it's very pro-protein and anti-carbs, making its cookbooks possibly a good match for the s/low carb diets we're trying at the moment. I picked this up at the library along with 500 Low-Carb Recipes: 500 Recipes from Snacks to Dessert, That the Whole Family Will Love in hopes of getting ideas for meals that we'd actually enjoy preparing and eating.

Everyone knows about The Atkins Diet, but after the founder, Dr. Robert Atkins passed away in 2003, his wife Veronica Atkins, kept the spirit of one of the most successful diets going and wrote Atkins For Life: low-carb cookbook in 2004, as a companion to the Atkins for Life book by Dr. Robert Atkins. I only found a few recipes to try from this book. Many of the others called for ingredients I hadn't heard of (mesclum greens, to name one), low carb chips and bread, or Atkins ingredients (Atkins pancake mix).

The recipes I saved to make were: Waldorf salad in apple bowls, Apricot-glazed pork with carrots, Asparagus, pepper, and goat cheese frittata, pumpkin pecan cheesecake, and Iceberg wedges with blue cheese dressing.

If only Dr Robert Atkins had asked his wife to help write his first book! (I don't know if they were married then...) This is a simple, clear, easily understandable read. Even someone very unfamiliar with the Atkins diet idea would find this easy to follow. Plus, the range of ideas is extraordinary: vegetarian, cooking for kids, cooking on a budget, cooking for special occasions, slow cooker meals, and much more. Very impressive for what could have been a very narrowly-focused book.
