The universally useful flour blend is fabulous, but I'd like to see more of a switch to gum free flours as it seems they are irritating to the digestion for many people with celiac disease. I also could never get the bread quite right, even after they released a corrected recipe. My pan was a little large, but the bread just had trouble rising.
