I'm the first to admit that I've been more than a little obsessing over the idea of canning for the last couple of years - ever since we started our small garden last year with my folks. I honestly don't have the time - or the energy - for canning, but it doesn't stop me from dreaming about doing it - talking about it - or reading endless volumes on it.

I really liked this little book - it packs in a lot of information and includes some really good recipes (oven-dried tomatoes in olive oil, for example). It also includes instructions for easily making your own cheese and butter, something I've always wanted to try (must be all those Little House books I read when I was a kid). The author also includes helpful charts throughout, so you don't have to search through the individual recipes for info on how long you need to blanch a particular veggie...more

Co-written by Carla Emery, author of Encyclopedia of Country Living, this book covers the basics of preserving, including freezing, canning, drying, "live storage," and other cures, as well as several chapters full of recipes to get you started with this year's harvest. I'll put this one away and pull it back out in August and September, when I'm ready to put it to use.

Good information but incomplete. There are many vegetables not mentioned. A decent introduction for the new food preserver.
