This book includes a lot of the history behind the North American oyster species and the importation of species from other areas such as Europe and Japan, the logistics of growing oysters, and most importantly home preparation instructions and recipes. It's really great as just a cookbook, but I enjoyed it more for the abundance of historical and factual information. Definitely check it out if you love oysters.
