Walks you through the basics of "real bbq" in other words using lump charcoal, wood chunks for smoke, water pans to regulate the temp, and a long cooking time. The book takes you through step by step, in five simple lessons, and is very prescriptive so it's great for a novice like myself. Those not able/willing to follow directions exactly should probably stay away. I just completed my first "smoke" and everything turned out great.
