YUM! I've been exploring the vegan and vegetarian cookbooks at my library looking for ones to buy and expand my cookbook library. This is the first one that is an absolute must buy (it is also the first one that I had to put in a hold for because it was always checked out).
As one reviewer said, it does call for people to saute veggies before they go into the pot, but that my be because there is so little liquid added. I might try adding things uncooked to see what happens. I really like the fac...more

Definitely one of my most-used cookbooks. I make the red lentil/carrot/coconut/whatever soup probably once a month or so. I find that the recipes could usually stand a little tweaking; often there is just no spice whatsoever. There's one potato curry that calls for a pound of potatoes and a teaspoon of curry. Ummm. What?
But overall the recipes are at the very least good launching points.

1 T. vegetable oil
1 white onion, finely chopped
4 stalks celery, diced
4 cloves garlic, minced
1/2 tsp. oregano
salt & pepper to taste
1/2 cup tomato ketchup
1/4 cup water
1 T. balsamic vinegar
1 T. dark brown sugar
1 T. Dijon mustard
2 cups cooked brown or green lentils, drained & rinsed

I enjoyed looking through this cookbook for recipes to cook for myself. I saved a couple of them in Evernote to try later, the Lentil Sloppy Joes and a spinach and artichoke dip. One of the common threads in the recipes, I noticed, was using a skillet to pre-cook before mixing everything together in the slow cooker. I guess this shows that I'm accustomed to just opening cans and dumping the contents into a crockpot, then shaking in a few spices. Time to try cooking in two pots/pans instead of on...more

I love the rice pudding with cherries and almonds and the bread pudding in carmel sauce from here. For actual food I like the peppery red onions and the mac and cheese recipe. Lots of recipes in here which is awesome for vegetarians and slow cooker lovers. The recipes are time consuming but they are yummy and usually last us the week.
This book has my go to recipe for the best ever Mediterranean lentil and spinach soup. I've made a handful of other soups and casseroles and all have been delicious. The author tells you exactly what you can prepare beforehand, if applicable, which is great for meal planning and timing. My copy of the book is wrinkled with bits of food and liquid, so this book is definitely well loved in our home.

This is a wonderful cookbook with great recipes. There's lots of traditional "comfort food." Some people have complained that you have to do too many steps before putting the food in the slow cooker (sauteing vegetables, boiling noodles, etc.), but I can't complain. I still think the recipes are pretty easy.
