When I first picked up this book in a used bookstore I knew that I had found something special. The author described a way of thinking about food which spoke clearly to my sensibilities. Opting for lighter sauces of the new french technique and reducing the fat and cream from the more classical french cuisine, the chef points the way to simple and delicious food.
