This cookbook takes the reader through a variety of vegetables, one by one. Each chapter begins with a short essay on the culinary and social history of that vegetable, followed by general notes on nutritional highlights. The remainder of each chapter is devoted to recipes featuring the vegetable of that chapter's focus. I recognize some from my childhood, while others were developed specifically for this book.
