“The Raj at Table: A Culinary History of the British in India” is a fascinating look at the impact of the British presence on what we think of as “Indian Cuisine.” Many of the dishes served in Indian restaurants in the west owe much to British influence, as well as the impact of the Portuguese in Goa. Anytime I read of Indian food, I end up hungry! If you love Indian cuisine, you’ll love this book. The original recipes are interesting too.

Another amazing historical cookbook from David Burton, who also authored French Colonial Cookery.

Looking forward to trying many of the recipes here. I've already knocked back several of the gimlets!

Could have been a deeper assessment, but nonetheless, a fascinating look at food and identity.
