Brooks Headley's Fancy Desserts: The Recipes of Del Posto's James Beard Award-Winning Pastry Chef
While other chefs paid dues on restaurant lines and at cooking schools, Brooks Headley was in the back of a tour van as a drummer in much-loved punk bands that never made a dime. Now executive pastry chef at New York's Del Posto restaurant, Headley creates unorthodox recipes that echo his unconventional background: fruit is king, vegetables are championed, acidity is key, ...more

Brooks Headley has GOT to be my "spirit pastry chef"! Along with David Chang, he is one of my favourite chefs for creativity. I love the punk rock aesthetic and attitude and this book - what I hope is Headley's first of many! - exudes honesty, delight, invention, collaboration and just some downright rock'n'roll! Headley became famous due to his interesting approach to pastry - his interest in incorporating different flavour profiles into his desserts (sweet, salty, sour, bitter, umami) which ...more
I LOVE THIS GUY!!! Now it's true that the only reason I got all the cultural references is that I am dating a guy who is also a punk rock drummer. He's been educating me. I'll tell you what, though--this book is one of those cookbooks where you want to make every recipe, you want to meet the author, and you want to live by his aesthetic code. Kind of like Nigella Lawson (whom he even mentions!) or Claudia Roden, or another of my recipe-collecting heroes. He's so friendly and down to earth, and ...more
One part memoir and one part cook book, Headley tells an excellent story of how his life experiences (being a part time baker to fund his full time job as a punk rock drummer, traveling the South with his punk band trying to find vegan meals, drunkenly landing a job at Batali's Del Posto as Pastry Chef) was the ersatz education needed to land him a James Beard award. Headley's dessert book is great for its amazing photographs, easy to make recipes (so long as you have an ice cream maker), and ...more
Brooks Headley is a writer, punk drummer and pastry chef at Del Posto's. His desserts are characterized by throwing veggies, of all types, together with typical dessert ingredients. The desserts, however, are anything but typical. I'm looking forward to making a few of them. There are many essays sprinkled throughout. Some, written by Headley, tell about his inspiration, his time in various bands, and a lot about the recipes. His voice definitely comes out and it's fun to read, although, at ...more
Kind of weird for a cookbook. A lot of really random stories and desserts that were SO super fancy that many needed four to five components. Having said that, I did copy a few down and plan on trying them out one day.

"I feel bad for chocolate, and a lot of the times I feel sorry for people who are obsessed with it. Maybe it's because I am not THAT crazy about it. What can I say? I'm a fruit guy. 'Death by chocolate,' or whatever the common saying is...that just sounds terrible."
