The chocolate cake recipe is fantastic - by far the best gluten-free cake I have eaten ever (and the non-celiac members of my family loved it as well). Considering I'm also dairy free & had to use almond milk and shortening instead of cow milk and butter, you know the recipe has to be good. I did modify by using Trader Joe's GF flour mix instead of her mix, because I do not have the patience (or space) to store every author's individual flour mixes. This book has a recipe for gluten free popovers that made me weep it was so perfectly how I remember them. Diagnosed with celiac in 1998 at a time when there was limited access to anything remotely worth eating - I had given up trying to bake anything it was all too nasty....then a friend gave me this book (thanks Kik!) and I reluctantly tried the popover recipe (I had tried several before and they were disgusting!) --- and they were so good it reignited my passion for creating gluten free delic ...more
