This book proclaims its main focus up front: the benefits of freshly ground whole-grain flour. Given the narrow nature of its focus, it gives an incredibly well-rounded overview of basic nutrition, a fairly balanced overview of various diets, including low-carb diets, and of course, an overview of the nutritional benefits of eating whole-grain products. This book argues that with the advent of modern bread machines and grain mills, every one can make their own bread from freshly ground whole grains.

I learned from this book that when I buy whole wheat flour, what I’m really buying is highly processed white flour with some of the bran and germ put back in at the end. Hmmm. Includes high-level information on a variety of subjects ranging from nutrition to disease prevention to grain milling. Unfortunately with such a wide focus, I felt like the level of information provided was often no better than what I could learn on the Internet or an episode of Good Eats. Probably the two most useful chapters of the book were 8 and 9, which discuss the different types of wheat and grain that can be milled and the characteristics of each. I give it 3 1/2 stars, but I rounded up. Lots of good information on home wheat grinding, though I have a sneaking suspicion that a fair amount of the information is out of date by now. It was worth reading, but honestly, it probably would have been more beneficial/pertinent to get up to date information off the internet.
