Quinoa is a super-food. It has a lot of nutrients and protien. I had no idea there were other varieties besides white. I have been making a quinoa/steel cut oats mixture for fast breakfasts. This book gives me many more ideas such as adding to soups, salads, and even baked goods. Did you know you can grind dry quinoa and make flour?

I was disappointed in this book as I was looking for innovative ideas for using quinoa. Instead, I found recipes with quinoa added or substituted.
However, if you are new to using quinoa, this would be a good place to start as familiar dishes with quinoa added may feel "safer". Also, these dishes would work for those allergic to or intolerant of gluten.
