It seems a good idea to write one book which is all about cooking meat. This compendium of meat recipes (together with lots of recipes for paired side dishes) is a step in the right direction. It fails to achieve the ideal of laying a foundation for every (common) sort of meat cookery but it offers some general comments on each variety and the recipes offered are very good.
